Cactus farming is fast becoming a profitable venture for farmers, especially those in California and the Southwest United States. Edible cactus are often called "prickly pears" and, surprisingly, hold a great deal of nutritional value. The edible part of the prickly pear is a fruit and can be used in salads, breads, desserts, beverages and jellies, among many other things. The young stems are called napoles and are considered a vegetable, to be used in salads and the like. But cactus are not only good for feeding humans, farmers are finding good use of them as cattle, sheep and buffalo forage. Because they have high nutritional value, cactus are quickly becoming popular in drought prone areas, addressing the issue of fodder shortage in the hot and dry parts of summer, making them a highly valuable crop in parts of the U.S. as well as other countries!
